Soy Beans

The soy bean has become a popular alternative to meat, especially among vegetarians. It has a high protein content, and is also a rich source of essential fatty acids and lecithin, nutrients necessary for brain function and fat emulsification. Foods containing soy protein isolates should be avoided as they are highly processed. Phytosterols, contained in soy, helps to prevent the uptake of cholesterol by blocking its absorption. The consumption of soy beans is now being associated with reduced rates of breast cancer. Findings may be related to the presence of isoflavone compounds that are mildly oestrogenic and anti-carcinogenic.  Soy bean products contain several anti cancer compounds including phyto-oestyrogen. The effects of soy consumption on circulating hormones was measured in pre-menopausal women. 

Results concluded that consumption of soy diets containing phyto-ostrogens may reduce circulating ovarian steroids thus decreasing the risk of breast cancer. Soy beans can be eaten in their whole form or as tofu or tempeh, two delicious soy based dishes. Avoid the many brands of genetically modified soy on the market. Buy soy products that are not genetically modified at your health store or natural foods shop.
