A Easy Recipe for Fenugreek Indian Curry:
Ingredients:
- 2 cups fenugreek leaves (fresh or frozen)
- 1 cup chopped onions
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Water as needed
- Fresh coriander leaves for garnish
Instructions:
1. Wash the fenugreek leaves thoroughly and chop them finely. If using frozen leaves, thaw them before use.
2. Heat oil in a pan or kadai over medium heat. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until they turn golden brown.
4. Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
5. Add chopped tomatoes and cook until they become soft and mushy.
6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a couple of minutes.
7. Add the chopped fenugreek leaves and mix everything together. Cook for 5-7 minutes until the leaves wilt and release their moisture.
8. Add water as needed to adjust the consistency of the curry. Cover and simmer for 10-15 minutes on low heat.
9. Sprinkle garam masala and give it a final stir. Cook for another 2 minutes.
10. Garnish with fresh coriander leaves.
11. Serve hot with steamed rice or roti.
