Ingredients
1 cup peeled
shrimps
2 cups mung
bean sprouts
½ cup sugar
snap peas
Small onion
2 slices
ginger
A few stalks
celery
2 small
cloves of garlic
1 tablespoon
soya sauce
salt to taste
1 tsp sugar
or honey
Instructions
- Chop shrimps into small pieces
- Slice onion, ginger and celery fine
- Heat a little oil in a pan, and braise the onions, peas, celery, sprouts and a sprinkling of salt to taste.
- Keep them crisp and remove from pan
- Add some more oil, and add the garlic and finely chopped ginger, then the shrimps and braise for one minute.
- Add all vegetables back again together with a mixture of the soya sauce, honey, sherry and one tablespoon water.
- Blend everything together well, cover pan with lid and braise for 3 minutes.
- Turn out and serve immediately with brown rice.
- They are a popular sprouting beans.
- Therapeutically, they work to ease water retention and lower high blood pressure.
- Mung beans contain compounds which aid the organs detoxifying processes.
