Health Benefits of Soybeans

Health Benefits of Soy Beans

Soy beans are a rich source of vegetable protein. They contain vitamin B complex, lecithin, vitamin E, unsaturated fatty acids and the minerals iron and calcium. Calcium builds and maintains strong bones and iron is required for the production of red blood cells and for the transportation of oxygen around the body. Soy beans are one of the richest sources of lecithin, a natural emulsifier of fats which assists in the prevention of artery and heart disease. These beans contain more protein than meat. Soybeans contain all the essential amino acids that we need for health, as well as omega 3 fatty acids. Soy also contain isoflavones which are antioxidants that fight free radicals that have been linked to many diseases.

How to Cook Soy Beans

Soak the beans overnight then cook them at a simmering temperature. The cooked beans may be mashed and added to casseroles or meat loaves. This will make your meal more nutritious. You may also use the beans cold in a salad.

Tofu or Bean Curd

This is made from soy milk. The Chinese have used this bean curd for centuries. It is delicious when steamed and used in salads.

Soy Flour

Soy flour is added to soups and stews to thicken them.

Milk Substitute

Children with a milk allergy are often given a milk substitute made from the bean.

Soy Sprouts

Soy sprouts contain properties called nitrilosides. Mung beans are rich in nitrilosides during the sprouting stage but contain less when they have matured. Mung bean sprouts have a lovely nutty taste and are very nutritious.
Soy sprouts contain vitamin C, most of the B vitamins, minerals, proteins and enzymes. The Chinese have eaten soy sprouts for rejuvenation and health for thousands of years. Research was done on ageing rats who were rejuvenated when fed a diet of sprouts.
Eating sprouts is anti-ageing and it made the cells in the body reproduce younger cells. When the beans are sprouted their nutritional value improves. The quality of the proteins in soy sprouts and the amino acid lysine which is needed to strengthen the immune system, improve with the sprouting process. Fiber binds the fats and toxins in our body to remove it efficiently. Sprouts are alkalizing to your body, which protect you from degenerative diseases as many illnesses are linked to acidity in the body. Sprouts are anti-ageing.
